One of my aunties gave me this recipe years ago. I had forgotten how easy it was to make and how moist it was (and stays moist for quite a while if you store it in a container).


3 eggs
150g sugar
250g plain flour, sifted
1 tblsp baking powder, sifted
2 tspn vanilla essence
1 cup (250ml) vegetable oil
1 cup (250ml) sweet white wine
2 apples, peeled, cored and chopped in small cubes


  1. Preheat oven to 180°C. Grease and line a 23cm square cake tin (or a 22cm round one).
  2. Beat the eggs and sugar until pale and fluffy. Gently incorporate the flour and baking powder. Add the vanilla essence, wine and oil. Stir in the apples.
  3. Bake for about an hour until a skewer inserted in the cake comes out clean.
  4. Eat!
  5. I used a late harvest wine for the recipe. Quite a boozy taste!
